Red Pepper Chardonnay Chicken

Ingredients:

3 lbs chicken, diced

2 c. tomatoes, diced

1/2 c. yellow pepper, chopped

2 Tbs minced garlic

1/3 c. sliced black olives

1/3 c. parsley, roughly chopped

1/2 c. Red Pepper Chardonnay wine jelly

 

Directions:

1. Skewer chicken, set aside.

2. Puree all remaining ingredients in a blender.

3. Pour mixture over chicken and refrigerate overnight.

4. After marinating, cook chicken on grill 2-3 minutes until done.
